How to make wood-fired Hot Cross Buns

WHAT YOU’LL NEED:

 

FOR THE FIRE:

 


THE BUNS

 

  • 450g strong white bread flour, plus extra for dusting
  • 1 x ½ tsp salt
  • 2 tsp mixed spice
  • 1 tsp ground cinnamon
  • 50g caster sugar
  • 7g sachet easy bake yeast
  • 250ml whole milk
  • 30g unsalted butter
  • 1 orange, zest
  • 120g raisins
  • 1 large egg
  • 1 x Olive oil, for greasing

THE CROSSES

 

  • 50g plain flour
  • Water

THE GLAZE

 

  • 2 tbsp golden syrup

Fancy a twist? Try adding 60g of chopped milk or dark chocolate to your dough.

LIGHTING YOUR WOOD-FIRED PIZZA OVEN:

To start you’ll need to fire up your pizza oven. It’s important to give the oven enough time to heat up to optimum temperature and then cool to the desired cooking temperature. For this recipe, we recommend approx. 180 degrees. We also suggest firing up your pizza oven over an hour before you want to start cooking.

 

METHOD:

Step 1. Mix the bread flour, salt, spices, sugar and yeast into a large bowl. Then in a small pan, warm the milk and butter over a low heat until the butter is melted. Add the zest and raisins and leave to cool until just warm, then beat in the egg. Then make a well in your flour mixture and pour in your milk, stir until you’ve made a soft dough.

 

Step 2. Tip the dough onto a lightly floured surface. Knead until smooth and elastic. Once your dough is ready, form into a ball and place in a lightly oiled bowl, covered with clingfilm. You will then need to leave your dough to prove for an hour or until it has doubled in size.

 

Step 3. Once your dough has risen, place on a lightly floured surface and knockback to remove some of the air. Your dough will then be ready to cut into pieces. This recipe makes 9 buns, so divide your dough into 9 pieces and roll into balls, we’d suggest each ball should weigh approx. 100g each.

 

Step 4. Place your dough balls onto a lined baking tray, cover with greased cling film and leave to rise for a further 40 minutes.

 

For the crosses - If you are adding crosses to your buns you’ll need to mix the plain flour and 5 tbsp of water into a paste. Either drizzle across each bun or spoon into a piping bag and pipe.

 

Step 5. Once your oven is at the correct temperature, you are ready to bake. Bake in your pizza oven for 20 minutes or so, making sure to check halfway through cooking.

 

Once your buns are baked, gently heat up the golden syrup and brush over the warm buns. If you can, wait a little for the buns to cool before serving or tuck in straight away for a tasty treat.
